Aging is beautifully mellowing and smoothing flavours and textures of this Shuixian, developing very nuanced flavours. Dry leaves are pure cocoa and with spices clove-like notes on the nose. After soaking the leaves the aroma on the lid and leaves becomes more floral, while certain woody sweetness comes into play as well.
