White Teas
White tea is one of the "Six Main Categories of Tea" and it is a micro fermented/oxidised (oxidation levels are below 10%). Whites are a treasure original to China, and Fujian province is its hometown par excellence, followed by Yunnan. White tea is the least processed and most natural of all teas, it doesn't go through a "shaqing" or "kill the green", frying, heating or rolling processes, like most of any other tea. The common factor to all white teas is that it undergoes a "withering" process.
